Oh yes, another recipe from the cold, rainy day.
I love the smell of cinnamon rolls in the oven. The entire house smells like cinnamon and sweet yeast bread. Can't be beat.
Yeast recipes can be a bit overwhelming for some. I was raised on yeast recipes, so it's almost second nature for me. Now, I make my own yeast bread base called sourdough. This was my zero Waste option for yeast but they also sell yeast in bulk in glass jars. Adorable jars, I might add. Jars everyone would want to reuse.
This recipe I will just be walking my Smart Readers through typical, fast rise yeast cinnamon rolls.
Really, I have always made my cinnamon rolls vegan. It's just not necessary to add all that extra junk!
Vegan Cinnamon Rolls:
-2 Tbsp canned chickpea liquid
-3 cups of flour (I would stick with fine milled pastry flour. Whole wheat or white)
-3 Tbsp fast rise yeast
-1/2 cup sugar
-another 1/4 cup sugar (or maple syrup)
-1/2 cup avocado oil
-1 1/2cup warm water
- 1tbsp flavoring. Today I chose maple syrup flavor I make at home with fenugreek!
- Cinnamon and sugar
-frosting (recipe below)
Start with blooming your yeast. This is done by using warm (not above 120 degrees F!), mixing in your 1/4c maple syrup and stirring in the yeast until dissolved. Allow to sit until nice and bubbly. There will be a nice foam on top! That's when you know you have woken up the yeast!
Add in the 1/2c avocado oil and then all the rest of the ingredients. Here's what I LOVE to do. Stir in half the flour and stir like mad for about 5-6 minutes. A mixer would work as well but I don't want to get mine out (The Lazy Girl in Pants...). Plus, free arm workout!
Tbis activates the gluten in the flour, important to texture! If you don't want to use a flour with gluten, skip this step.
Then add in the rest of the flour and turn onto a floured area. Knead for another 5-6minutes.
Allow to rise to double in a warm area.
Roll the dough out to about 1" thickness. Coat with avocado oil and sprinkle with cinnamon and sugar! Roll up and cut with a good knife!
Form and place in your pan!
You can allow to rise again in the pan for about 30 minutes or cook right off. Allowing it a second rise will yield VERY flakey Rolls!
Bake at 350degrees F for around 15-20 minutes. Allow to brown a little but not harden your Rolls.
I was lazy today and since my cinnamon rolls are maple flavored, I went with a simple maple glaze. Just mixed equal parts vegan powdered sugar with blackstrap molasses! So good!
